Ingredients

  • 2.5 pounds Cracked corn
  • 5 pounds Granulated sugar
  • 5 gallons Distilled water
  • 2 tablespoons Dry yeast
  • 1 pound Malted barley

Directions

Step 1

Sanitize all equipment thoroughly to prevent contamination.

Step 2

In a large pot, bring 4 gallons of distilled water to a boil. Carefully add the cracked corn, stirring constantly to prevent clumping.

Step 3

Reduce heat to a simmer and stir in the malted barley. Simmer the mixture for an additional 1.5 to 2 hours, stirring occasionally, until the mixture thickens into a mash.

Step 4

Transfer the mash to a sanitized fermentation container and allow it to cool to 75-80°F.

Step 5

Once cooled, dissolve the granulated sugar in 1 gallon of lukewarm distilled water and add it to the mash.

Step 6

Sprinkle the dry yeast evenly over the top of the mash and stir gently. Cover the container with a loose-fitting lid to allow gases to escape and place it in a dark, temperature-stable location (70-85°F).

Step 7

Allow the mash to ferment for 5-10 days, gently stirring once a day. You'll know fermentation is complete when bubbling stops and the mash no longer has a sweet smell.

Step 8

Once fermentation is complete, strain the liquid from the solids using a fine-mesh strainer or cheesecloth, collecting the liquid in a sanitized still.

Step 9

Using your still, distill the strained liquid according to your still's instructions, discarding the initial 2-3 ounces of liquid ('the foreshots') as it's not safe to consume.

Step 10

Continue distilling and collecting the moonshine in sanitized glass containers, monitoring the proof with an alcohol hydrometer. Stop collecting once the proof drops below your desired level.

Step 11

Store the moonshine in clean, sealed jars in a cool, dark place, and enjoy responsibly!
