Ingredients

  • 3 pounds beef chuck roast
  • 4 large carrots
  • 1 large yellow onion
  • 3 celery stalks
  • 4 garlic cloves
  • 1.5 pounds baby potatoes or Yukon Gold potatoes

  • 3 tablespoons soy sauce
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1.5 teaspoons salt
  • 1 teaspoon black pepper
  • 2 tablespoons olive oil
  • 2 tablespoons all-purpose flour (optional, for gravy)
  • 2 tablespoons cold water (optional, for gravy)

Directions

Step 1

Season the beef chuck roast generously with salt and black pepper on all sides.

Step 2

Heat a large skillet over medium-high heat and add the olive oil. Sear the beef roast in the skillet for 3-4 minutes on each side until browned. Remove from the skillet and set aside.
