Ingredients

  • 500 grams Beef sirloin
  • 2 tablespoons Cornstarch
  • 3 tablespoons Soy sauce
  • 1 tablespoon Sesame oil
  • 3 cloves Garlic, minced
  • 1 tablespoon Ginger, minced
  • 100 grams Cashews, unsalted
  • 2 medium Bell peppers (red and green), sliced
  • 1 small Onion, sliced
  • 2 tablespoons Oyster sauce
  • 1 tablespoon Dark soy sauce
  • 1 teaspoon Brown sugar
  • 2 tablespoons Vegetable oil
  • 4 tablespoons Water
  • 2 stalks Green onions, sliced for garnish
  • 4 cups Cooked white rice (optional)

Directions

Step 1

Slice the beef sirloin into thin strips against the grain. In a bowl, toss the beef with 1 tablespoon of soy sauce and 2 tablespoons of cornstarch to coat evenly. Let it marinate for about 10 minutes.

Step 2

In a small bowl, mix the remaining soy sauce, oyster sauce, dark soy sauce, brown sugar, and water to prepare the sauce. Set aside.

Step 3

Heat a wok or large skillet over medium-high heat and add 1 tablespoon of vegetable oil. Toast the cashews for 2-3 minutes until golden and fragrant, then remove them from the wok and set aside.

Step 4

Add another 1 tablespoon of vegetable oil to the wok and increase the heat to high. Add the marinated beef in a single layer and stir-fry for 2-3 minutes until browned on the outside. Remove the beef from the wok and set aside.

Step 5

Lower the heat to medium and add sesame oil to the wok. Sauté the minced garlic and ginger until fragrant, about 30 seconds.

Step 6

Add the sliced bell peppers and onion to the wok. Stir-fry for 2-3 minutes until they start to soften but still retain some crunch.

Step 7

Return the cooked beef to the wok, followed by the prepared sauce. Stir everything together and cook for another 2-3 minutes until the sauce thickens slightly and coats the beef and vegetables.

Step 8

Turn off the heat and toss in the toasted cashews.

Step 9

Serve the Tender Beef Cashews hot, garnished with sliced green onions. Pair with steamed white rice if desired.
