Ingredients

  • 12 pieces large prawns
  • 100 grams all-purpose flour
  • 50 grams cornstarch
  • 1 teaspoon baking powder
  • 160 milliliters ice-cold water
  • 1 piece egg yolk
  • 500 milliliters vegetable oil, for frying
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • 50 milliliters soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon grated ginger

Directions

Step 1

Peel and devein the prawns, leaving the tail shells intact. Pat them dry using paper towels. Season with salt and pepper.

In a medium bowl, combine the all-purpose flour, cornstarch, and baking powder. Mix them well.

In a separate bowl, whisk the egg yolk gently. Add the ice-cold water to the egg yolk and stir to mix.
