Ingredients

  • 120 grams Tahini (sesame paste)
  • 60 milliliters Lemon juice (freshly squeezed)
  • 1 piece Garlic clove (small), minced
  • 80 milliliters Water (cold)
  • 1 teaspoon Salt
  • 0.5 teaspoon Ground cumin (optional)
  • 1 tablespoon Olive oil (optional, for garnish)
  • 1 tablespoon Fresh parsley (optional, for garnish)

Directions

Step 1

In a medium mixing bowl, add the tahini, lemon juice, and minced garlic.

Step 2

Using a whisk or fork, stir the mixture until it begins to thicken and seize up. This is normal and indicates the tahini is reacting with the acidity of the lemon juice.

Step 3

Gradually add the cold water, 1-2 tablespoons at a time, whisking continuously. The sauce will loosen and turn creamy as you incorporate the water. Adjust the amount of water depending on your desired consistency (less for a thicker dip, more for a thinner dressing).

Step 4

Mix in the salt and ground cumin (if using), tasting and adjusting to your preference.

Step 5

Transfer the sauce to a serving bowl or airtight container. If desired, drizzle with olive oil and sprinkle with chopped parsley for garnish.

Step 6

Serve immediately or refrigerate for up to 5 days. Stir well before serving if it has been stored.
