Ingredients

  • 1 teaspoon loose-leaf green tea (or 1 green tea bag)
  • 120 milliliters water
  • 2 tablespoons unsalted butter
  • 1 small shallot, finely minced
  • 60 milliliters dry white wine
  • 60 milliliters heavy cream
  • 1 tablespoon lemon juice
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper, freshly ground
  • 1 tablespoon fresh parsley, finely chopped (optional, for garnish)

Directions

Step 1

Bring 120 milliliters of water to just below boiling (around 80°C or 175°F).

Step 2

Steep the green tea in the hot water for 3 minutes, then strain and set aside to cool slightly.

Step 3

In a medium saucepan over low heat, melt 2 tablespoons of unsalted butter.

Step 4

Add the finely minced shallot to the saucepan and sauté for 2-3 minutes, or until softened and translucent.

Step 5

Pour in 60 milliliters of dry white wine and increase the heat to medium. Let the wine simmer for 3-4 minutes, reducing by about half.

Step 6

Reduce the heat to low and stir in the brewed green tea and 60 milliliters of heavy cream. Simmer gently for 2-3 minutes, allowing the flavors to meld.

Step 7

Add 1 tablespoon of lemon juice, 0.5 teaspoons of salt, and 0.25 teaspoons of freshly ground black pepper. Stir well and taste, adjusting seasoning if necessary.

Step 8

Remove the saucepan from heat. Strain the sauce through a fine-mesh sieve into a bowl if a smoother consistency is desired.

Step 9

Serve the tea sauce warm, drizzled over freshly cooked white fish such as cod, halibut, or tilapia. Garnish with finely chopped parsley if desired.
