Ingredients

  • 500 grams Chicken (skinless, bone-in or boneless)
  • 2 tablespoons Ginger-garlic paste
  • 3 tablespoons Yogurt
  • 1 teaspoon Red chili powder
  • 1 teaspoon Turmeric powder
  • 1.5 teaspoons Coriander powder
  • 1 teaspoon Cumin powder
  • 1 teaspoon Garam masala powder
  • 1 teaspoon Kasuri methi (dried fenugreek leaves)
  • 2 medium Fresh tomatoes (finely chopped)
  • 1 large Onion (finely chopped)
  • 2 Green chilies (slit)
  • 2 tablespoons Fresh coriander leaves (chopped)
  • 3 tablespoons Oil or ghee
  • 1 tablespoon Butter
  • 0 to taste Salt
  • 1 tablespoon Lemon juice

Directions

Step 1

Clean and cut the chicken into medium-sized pieces. Pat dry and set aside.

Step 2

In a bowl, marinate the chicken with ginger-garlic paste, yogurt, red chili powder, turmeric powder, and salt. Let it rest for 30 minutes.

Step 3

Heat 2 tablespoons of oil or ghee on a tawa (flat skillet) over medium heat. Add the marinated chicken and cook until it starts to brown slightly, about 8-10 minutes. Remove and set aside.

Step 4

In the same tawa, add the remaining oil or ghee and butter. Once heated, add the chopped onions and green chilies. Sauté until the onions become golden brown.

Step 5

Add the chopped tomatoes and cook until they turn soft and mushy, about 5 minutes.

Stir in the coriander powder, cumin powder, garam masala powder, and kasuri methi. Cook for another 1-2 minutes until the spice mix is aromatic.

Add the partially cooked chicken back to the tawa and mix well with the masala. Cover and cook for 20-25 minutes, stirring occasionally, until the chicken is fully cooked and tender.

Step 8

Adjust salt as needed and finish with lemon juice. Garnish with fresh coriander leaves.

Serve hot with naan, roti, or steamed rice.
