Ingredients

  • 200 grams Silken tofu
  • 150 grams Dark chocolate (70% cocoa or higher)
  • 30 grams Cocoa powder (unsweetened)
  • 100 grams Granulated sugar
  • 50 grams Brown sugar
  • 100 grams All-purpose flour
  • 1 teaspoon Baking powder
  • 1 teaspoon Vanilla extract
  • 0.5 teaspoon Salt
  • 2 tablespoons Vegetable oil
  • 50 grams Chopped nuts (optional)

Directions

Step 1

Preheat your oven to 180°C (350°F) and line an 8x8-inch (20x20 cm) baking pan with parchment paper, allowing a bit of overhang for easy removal.

Step 2

Melt the dark chocolate in a heatproof bowl over a pot of simmering water or in the microwave in 20-second increments, stirring until smooth. Set aside to cool slightly.

Step 3

In a large mixing bowl, blend the silken tofu using a hand blender or food processor until completely smooth and creamy.

Step 4

Add the melted chocolate to the tofu along with the vegetable oil and vanilla extract. Mix until well incorporated.

Step 5

In a separate bowl, sift together the flour, cocoa powder, baking powder, and salt. Stir in both the granulated and brown sugars.

Step 6

Gradually fold the dry ingredients into the wet mixture until just combined. Avoid overmixing. If using chopped nuts, gently fold them in now.

Step 7

Pour the batter into the prepared baking pan, spreading it evenly with a spatula.

Step 8

Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs (avoid overbaking for a fudgier texture).

Step 9

Remove the brownies from the oven and let them cool completely in the pan. Once cooled, use the parchment paper overhang to lift them out.

Step 10

Slice into 12 squares or snack-sized rectangles and serve. Store leftovers in an airtight container at room temperature for up to 3 days or refrigerate for up to a week.
