Ingredients

  • 2 lbs baby potatoes
  • 8 slices bacon
  • 1 medium, diced yellow onion
  • 2 cloves, minced garlic
  • 3 tbsp apple cider vinegar

  • 2 tbsp, chopped fresh parsley
  • 1 tsp salt

Directions

Step 1

Wash the baby potatoes thoroughly and place them in a large pot. Cover with cold water, add a pinch of salt, and bring to a boil over high heat. Reduce the heat to medium and simmer for 12-15 minutes, or until the potatoes are fork-tender. Drain and set aside to cool slightly.

While the potatoes are cooking, cook the bacon in a large skillet over medium heat until crispy. Remove the bacon and place it on a paper towel-lined plate to drain. Reserve 2 tablespoons of the bacon grease in the skillet and discard the rest.
