Directions

Step 1

Wash and peel the potatoes. Dice them into 1/2-inch cubes and place them in a large bowl of cold water. Let soak for 5-10 minutes to remove excess starch.

While the potatoes soak, finely dice the onion and bell pepper. Set aside in a small bowl.

Drain the potatoes and pat them dry with a clean kitchen towel or paper towels to remove excess moisture.
