Ingredients

  • 1.5 cups Sweet corn kernels (fresh or canned)
  • 0.75 cups Cheddar cheese (grated)
  • 1 cups Breadcrumbs
  • 0.25 cups All-purpose flour
  • 1 Egg (beaten)
  • 1 teaspoons Garlic powder
  • 0.5 teaspoons Dried oregano
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper (ground)
  • 1 tablespoons Olive oil (for coating baking sheet)

Directions

Step 1

Preheat your oven to 400°F (200°C) and lightly grease a baking sheet with olive oil or line it with parchment paper.

Step 2

If using fresh corn, blanch the kernels in boiling water for 2-3 minutes, then drain and let cool. If using canned corn, drain and rinse thoroughly.

Step 3

In a food processor, pulse the corn kernels until coarsely mashed, leaving some texture intact. Transfer the mixture to a large mixing bowl.

Step 4

Add grated cheddar cheese, breadcrumbs, all-purpose flour, beaten egg, garlic powder, dried oregano, salt, and black pepper to the bowl. Mix well until the mixture comes together into a sticky dough-like consistency.

Step 5

Using your hands, take about a tablespoon of the mixture and shape it into a small ball. Repeat until all the mixture is used, making approximately 16-18 balls.

Step 6

Arrange the corn balls on the prepared baking sheet, leaving a little space between each ball.

Step 7

Bake in the preheated oven for 20-25 minutes or until the balls turn golden brown and crispy, flipping them halfway through cooking to ensure even browning.

Step 8

Once done, remove the corn balls from the oven and let them cool slightly before serving.

Step 9

Serve warm with your favorite dipping sauce, such as ketchup, aioli, or spicy mayo. Enjoy!
