Ingredients

  • 12 oz Rotini pasta
  • 2 cups Cherry tomatoes

  • 0.25 cup Olive oil
  • 3 tbsp Red wine vinegar
  • 1 tsp Dijon mustard
  • 1 clove Garlic (minced)
  • 1 tsp Dried oregano
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper

Directions

Step 1

Cook the rotini pasta according to the package instructions until al dente. Drain and rinse under cold water to cool. Set aside.

While the pasta cooks, prepare the vegetables. Slice the cherry tomatoes in half, dice the cucumber and red bell pepper, thinly slice the red onion, and set them aside.
