  • 1 tablespoon honey
  • 1 whole, juiced lemon
  • 0.25 cup, chopped fresh cilantro
  • 0.25 cup, toasted slivered almonds
  • 1 cup, uncooked couscous
  • 1.25 cups water
  • 1 teaspoon, to taste salt
  • 0.5 teaspoon, to taste black pepper

Directions

Step 1

Season chicken thighs with salt and black pepper on both sides.

Step 2

Heat 2 tablespoons of olive oil in a deep skillet or Dutch oven over medium-high heat.

Step 3

Sear chicken thighs skin-side down for 4-5 minutes until golden brown. Flip and cook the other side for 3 more minutes. Remove chicken and set aside.

Step 4

Lower heat to medium and add the remaining tablespoon of olive oil to the skillet. Sauté diced onion for 5 minutes until softened.

Add minced garlic, cinnamon, cumin, turmeric, and paprika. Cook for 1 minute until fragrant.
