Ingredients

  • 225 grams all-purpose flour
  • 1.5 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoons ground nutmeg
  • 115 grams unsalted butter
  • 150 grams granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 120 milliliters whole milk
  • 2 medium apples (firm, such as Granny Smith or Pink Lady)
  • 50 grams brown sugar
  • 1 tablespoon lemon juice
  • 10 grams powdered sugar

Directions

Step 1

Preheat your oven to 180°C (350°F) and line the bottom of a 9-inch (23cm) springform cake pan with parchment paper. Lightly grease the sides of the pan with butter.

Step 2

In a medium bowl, sift together the all-purpose flour, baking powder, ground cinnamon, and ground nutmeg. Set aside.

Step 3

In a large mixing bowl, cream together the unsalted butter and granulated sugar until light and fluffy, about 2-3 minutes. Use a hand or stand mixer on medium speed for best results.

Step 4

Add the eggs one at a time to the butter-sugar mixture, beating well after each addition. Stir in the vanilla extract.

Step 5

Gradually mix in the dry ingredients, alternating with the whole milk. Start and end with the dry ingredients to ensure even mixing. Do not overmix; just combine until smooth.

Step 6

Peel, core, and thinly slice the apples. Toss the apple slices with the lemon juice in a small bowl to prevent browning.

Step 7

Pour half of the cake batter into the prepared pan and smooth the surface with a spatula. Arrange half of the apple slices on top of the batter in a single layer. Sprinkle half of the brown sugar over the apples.

Step 8

Pour the remaining batter over the apples and smooth the top again. Arrange the remaining apple slices decoratively on the surface and sprinkle the rest of the brown sugar evenly over them.

Step 9

Bake the cake in the preheated oven for 45-50 minutes, or until a skewer inserted into the center comes out clean. The edges should be golden brown, and the apples on top will be soft and caramelized.

Step 10

Allow the cake to cool in the pan for 10 minutes, then carefully remove the springform ring and transfer the cake to a wire rack to cool completely.

Step 11

Before serving, dust the top of the cake with powdered sugar for a finishing touch. Slice and enjoy your Tasmanian Apple Cake with a dollop of whipped cream or a scoop of vanilla ice cream, if desired.
