Ingredients

  • 2 tablespoons Unsalted butter
  • 1 medium Shallot
  • 1 clove Garlic
  • 0.5 cup Dry white wine
  • 1 tablespoon Fresh tarragon leaves
  • 0.5 cup Heavy cream
  • 0.25 cup Beef stock
  • 1 teaspoon Dijon mustard
  • 0.25 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Finely mince the shallot and garlic. Chop the fresh tarragon leaves and set everything aside.

Step 2

In a medium skillet, melt the butter over medium heat until it is fully melted and foaming.

Step 3

Add the minced shallot to the skillet and sauté for 2–3 minutes until softened and translucent.

Step 4

Stir in the minced garlic and cook for an additional 30 seconds until fragrant.

Step 5

Pour in the white wine and scrape the bottom of the skillet with a wooden spoon to release any browned bits. Let the wine simmer for about 2 minutes, reducing slightly.

Step 6

Stir in the fresh tarragon, heavy cream, beef stock, Dijon mustard, salt, and black pepper. Mix well to combine all ingredients.

Step 7

Let the sauce simmer gently on low heat for 5–7 minutes, stirring occasionally, until it thickens slightly.

Step 8

Taste the sauce and adjust the seasoning, if necessary.

Step 9

Remove the sauce from the heat and serve warm over freshly cooked steak or other grilled meats.
