Ingredients

  • 500 grams fresh or frozen sweet peas
  • 30 grams unsalted butter
  • 2 tablespoons fresh tarragon leaves
  • 50 milliliters heavy cream
  • 1 clove garlic clove, minced
  • 1 tablespoon lemon juice
  • 0.5 teaspoons salt
  • 0.25 teaspoons black pepper
  • 250 milliliters water

Directions

Step 1

Bring a medium saucepan of water to a boil. Add a pinch of salt to the boiling water.

Add the sweet peas to the boiling water and cook for 3-4 minutes, or until tender and vibrant green.

Drain the peas, reserving 250 milliliters of the cooking water, and set them aside.
