Ingredients

  • 100 grams Tarama (cured fish roe, typically cod or carp)
  • 1 piece Russet potato (medium, peeled and boiled)
  • 180 ml Olive oil (extra virgin)
  • 60 ml Lemon juice (freshly squeezed)
  • 1 piece Garlic (small clove, minced)
  • 1 piece Red onion (small, finely chopped)
  • 30 ml Water (to adjust consistency, optional)
  • 2 slices Bread (crusts removed, soaked in water and squeezed, optional alternative to potato)

Directions

Step 1

Peel and boil the potato in lightly salted water until tender, about 10 minutes. Drain and allow it to cool slightly.

Step 2

In a food processor, combine the tarama (fish roe), boiled potato (or soaked bread if using), garlic, and red onion.

Step 3

Process the mixture until smooth and well combined, scraping down the sides as needed.

Step 4

With the food processor running, slowly drizzle in the olive oil. Continue to process until the mixture is creamy and emulsified.

Step 5

Add the freshly squeezed lemon juice in increments, processing in between, until the desired balance of tanginess is achieved. Taste as you go.

Step 6

If the mixture is too thick, add a small amount of water, 1 tablespoon at a time, to adjust the consistency.

Step 7

Transfer the taramosalata to a serving bowl, cover, and chill in the refrigerator for at least 30 minutes to allow the flavors to meld.

Step 8

Serve cold with warm pita bread, crackers, or sliced vegetables for dipping.
