Ingredients

  • 150 grams Tarama (salted and cured fish roe)
  • 100 grams Day-old bread (crusts removed)
  • 60 ml Lemon juice
  • 250 ml Extra virgin olive oil
  • 100 ml Water
  • 1 medium White onion (finely grated)
  • 1 medium Garlic clove (minced)

Directions

Step 1

Soak the bread in the water for about 5 minutes or until softened. Gently squeeze out excess water from the bread and set it aside.

Step 2

In a food processor, add the tarama and process until smooth.

Step 3

Add the soaked bread to the food processor with the tarama and blend until fully combined and smooth.

Step 4

With the processor running, slowly pour in the olive oil in a steady stream to create an emulsion. This should take a few minutes.
