Ingredients

  • 2 cups Cooked shredded chicken
  • 4 oz Cream cheese
  • 1 cup Shredded cheddar cheese
  • 1 cup Shredded Monterey Jack cheese
  • 0.5 cup Salsa
  • 1 tsp Garlic powder
  • 1 tsp Chili powder
  • 1 tsp Cumin
  • 0.5 tsp Salt
  • 0.25 tsp Pepper
  • 12 pieces Small corn tortillas
  • 1 cup Vegetable oil

Directions

Step 1

In a large mixing bowl, combine the shredded chicken, cream cheese, cheddar cheese, Monterey Jack cheese, salsa, garlic powder, chili powder, cumin, salt, and pepper. Mix well until all ingredients are evenly combined.

Step 2

Warm the corn tortillas in a microwave or on a hot skillet for 10-15 seconds to make them pliable and prevent cracking.

Step 3

Place about 2 tablespoons of the chicken mixture onto one side of each tortilla. Roll the tortilla tightly around the filling and secure it with a toothpick if necessary.

Step 4

In a large skillet or deep frying pan, heat the vegetable oil over medium heat until it reaches 350°F (175°C).

Step 5

Carefully place the taquitos seam-side down into the hot oil, working in batches to avoid overcrowding the pan.

Step 6

Fry the taquitos for 2-3 minutes on each side, or until they are golden brown and crispy.

Step 7

Use a slotted spoon or tongs to remove the taquitos from the oil and place them on a plate lined with paper towels to drain any excess oil.

Step 8

Repeat with the remaining taquitos.

Step 9

Serve hot with your favorite dipping sauces such as sour cream, guacamole, or salsa.
