Ingredients

  • 10 medium Tomatillos
  • 2 whole Jalapeño peppers
  • 0.5 medium White onion
  • 2 whole Garlic cloves
  • 1 bunch Cilantro
  • 1 teaspoon Salt
  • 1 whole Lime
  • 0.25 cup Water

Directions

Step 1

Peel the husks off the tomatillos and rinse them under warm water to remove any sticky residue. Cut them in half.

Step 2

Place a medium-sized saucepan over medium heat, and add the halved tomatillos and whole jalapeños. Fill the saucepan with enough water to just cover the vegetables.

Step 3

Bring the water to a boil, then reduce to a simmer, cooking the tomatillos and jalapeños for about 6-8 minutes, or until the tomatillos soften and turn a dull olive green color.

Step 4

Drain the boiled tomatillos and jalapeños into a colander and allow them to cool for about 5 minutes.

Step 5

Cut the onion into quarters and chop away any large stems from the cilantro bunch.

Step 6

In a blender or food processor, combine the cooked tomatillos, cooked jalapeños, quartered onion, garlic, cilantro, and 1 teaspoon of salt.

Step 7

Squeeze the juice of one lime into the blender and add 1/4 cup of water to help with blending.

Step 8

Blend the mixture until it reaches a smooth consistency. Taste the salsa and adjust seasoning if needed, adding more lime juice or salt to preference.

Step 9

Pour the salsa verde into a serving bowl and let it cool to room temperature before serving. Alternatively, refrigerate and serve chilled.
