Ingredients

  • 300 grams Cherry tomatoes
  • 1 medium Cucumber
  • 1 medium Red bell pepper

  • 100 grams Pitted green olives
  • 120 grams Chorizo sausage
  • 2 tablespoons Fresh parsley
  • 3 tablespoons Extra virgin olive oil
  • 1.5 tablespoons Red wine vinegar
  • 1 teaspoon Honey
  • 0.5 teaspoon Smoked paprika
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Slice the cherry tomatoes in half and place them in a large salad bowl.

Peel the cucumber if desired and dice into bite-sized pieces. Add to the bowl.

Core and dice the red bell pepper into small chunks and add to the salad.
