Ingredients

  • 4 pieces Chicken thighs, boneless and skinless
  • 0.25 cups Lemon juice, freshly squeezed
  • 1 teaspoon Lemon zest
  • 2 tablespoons Olive oil
  • 1 tablespoon Honey
  • 2 cloves Garlic, minced
  • 0.5 teaspoons Paprika
  • 1 teaspoon Dried oregano
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper, freshly ground
  • 0.5 cups Chicken broth or water
  • 2 tablespoons Fresh parsley, chopped (optional for garnish)

Directions

Step 1

Pat the chicken thighs dry with a paper towel and season them on both sides with salt, black pepper, and paprika.

Step 2

In a large skillet or pan, heat the olive oil over medium-high heat. Once hot, add the chicken thighs. Sear them for 4-5 minutes on each side until golden brown. Remove the chicken from the pan and set aside.

Step 3

In the same skillet, lower the heat to medium. Add the minced garlic and sauté for 1 minute until fragrant, being careful not to burn it.

Step 4

Add the lemon juice, lemon zest, honey, and dried oregano to the pan. Stir to combine and let it simmer for 1-2 minutes to let the flavors meld together.

Step 5

Pour in the chicken broth (or water) and stir well. Bring the sauce to a gentle simmer.

Step 6

Return the seared chicken thighs to the pan, spooning some of the sauce over the top of the pieces. Lower the heat, cover the pan, and let the chicken cook for 15-20 minutes, or until the chicken is cooked through and the internal temperature reaches 165°F (74°C).

Step 7

Remove the lid and allow the sauce to thicken slightly by letting it simmer uncovered for an additional 2-3 minutes if desired.

Step 8

Garnish the chicken with chopped fresh parsley (optional) and serve immediately with your choice of sides, such as rice, mashed potatoes, or roasted vegetables.
