Ingredients

  • 250 g All-purpose flour
  • 2 tsp Baking powder
  • 0.5 tsp Salt
  • 120 g Unsalted butter
  • 150 g Granulated sugar
  • 2 large Eggs
  • 120 g Plain yogurt
  • 1 tbsp Orange zest
  • 1 tsp Lemon zest
  • 60 ml Orange juice
  • 80 g Dried cranberries
  • 80 g Dried apricots (chopped)
  • 100 g Powdered sugar (for glaze)
  • 2 tbsp Lemon juice (for glaze)

Directions

Step 1

Preheat your oven to 175°C (350°F). Grease and line a 9x5-inch loaf pan with parchment paper.

In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.

In a large mixing bowl, cream the butter and sugar together until light and fluffy using a hand mixer or stand mixer.

Add the eggs one at a time, beating well after each addition. Incorporate the yogurt, orange zest, and lemon zest into the mixture.

Gradually add the dry ingredients to the wet ingredients in three batches, alternating with the orange juice. Start and end with the dry ingredients. Mix gently until just combined, taking care not to overmix.
