Ingredients

  • 2 heads Romaine lettuce
  • 3 cups Day-old bread (for croutons)
  • 5 tablespoons Extra-virgin olive oil

  • 3 tablespoons Lemon juice
  • 1 teaspoon Dijon mustard
  • 2 fillets Anchovy fillets (optional)
  • 1 teaspoon Worcestershire sauce
  • 1 large Egg yolk
  • 1 cup Grated Parmesan cheese
  • 0.5 teaspoons Salt
  • 0.5 teaspoons Black pepper
  • 0.25 cup Parmesan shavings (for garnish)

Directions

Step 1

Preheat the oven to 375°F (190°C).

Step 2

Cut the day-old bread into 1-inch cubes and toss in 2 tablespoons of olive oil. Spread the bread cubes on a baking sheet and bake for 8-10 minutes, or until golden and crisp. Set aside to cool.

Rinse and dry the romaine lettuce. Chop into bite-sized pieces and place them in a large salad bowl.
