Ingredients

  • 3 medium-sized sweet potatoes
  • 2 whole tangerines
  • 1 teaspoon tangerine zest
  • 3 tablespoons unsalted butter
  • 2 tablespoons brown sugar
  • 1 teaspoon ground cinnamon
  • 0.25 teaspoon ground nutmeg
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.25 cup tangerine juice
  • 1 tablespoon fresh parsley

Directions

Step 1

Preheat your oven to 375°F (190°C) and lightly grease a baking dish.

Step 2

Peel and cut the sweet potatoes into 1-inch cubes and place them in the baking dish.

Step 3

Zest one of the tangerines to get about 1 teaspoon of zest. Then juice both tangerines to yield approximately 1/4 cup of juice. Set aside.

Step 4

In a small saucepan over medium heat, melt the butter. Once melted, stir in brown sugar, ground cinnamon, ground nutmeg, salt, black pepper, tangerine juice, and tangerine zest. Mix until the sugar dissolves and the sauce is smooth.

Step 5

Pour the butter and tangerine mixture over the sweet potatoes, tossing to coat evenly.

Step 6

Cover the baking dish with aluminum foil and bake for 30 minutes.

Step 7

After 30 minutes, remove the foil, stir the sweet potatoes, and bake uncovered for an additional 10–15 minutes or until the sweet potatoes are tender and caramelized around the edges.

Step 8

Remove the sweet potatoes from the oven and let them rest for a few minutes.

Step 9

Sprinkle freshly chopped parsley over the top for a pop of color and freshness before serving.
