Ingredients

  • 450 grams Shrimp, peeled and deveined
  • 3 Tangerines
  • 120 grams Mixed salad greens
  • 1 Avocado, sliced
  • 1 Cucumber, thinly sliced
  • 0.5 Red onion, thinly sliced
  • 3 tablespoons Olive oil
  • 4 tablespoons Tangerine juice (freshly squeezed)
  • 1 teaspoon Honey
  • 1 teaspoon Dijon mustard
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 1 clove Garlic, minced
  • 0.5 teaspoon Paprika
  • 1 tablespoon Butter

Directions

Step 1

In a small bowl, mix 1 tablespoon of olive oil, garlic, paprika, salt, and black pepper to make the shrimp marinade.

Step 2

Toss the shrimp with the marinade until well coated. Set aside for 10 minutes to marinate.

Step 3

While the shrimp marinates, peel the tangerines and separate them into segments. Remove any seeds and set the segments aside.

Step 4

In a large salad bowl, combine the mixed greens, sliced avocado, cucumber, red onion, and tangerine segments.

Step 5

In a small bowl, whisk together the remaining 2 tablespoons of olive oil, tangerine juice, honey, Dijon mustard, and a pinch of salt and pepper to make the dressing.

Step 6

Heat a skillet over medium heat and melt the butter. Add the marinated shrimp and cook for 2-3 minutes on each side, or until they turn pink and are fully cooked through. Remove from the skillet and let cool slightly.

Step 7

Add the cooked shrimp to the salad bowl with the other ingredients.

Step 8

Drizzle the tangerine dressing over the salad and gently toss to combine.

Step 9

Serve immediately and enjoy your refreshing Tangerine Shrimp Salad!
