Ingredients

  • 300 g Chicken thigh (boneless, skinless)
  • 120 g Plain yogurt
  • 2 cloves Garlic (minced)
  • 1 tsp Ginger (grated)
  • 2 tbsp Tandoori masala spice mix
  • 1 tbsp Lemon juice
  • 1 tbsp Olive oil
  • 1 tsp Salt
  • 1 piece Pizza dough (store-bought or homemade)
  • 100 g Pizza sauce
  • 150 g Mozzarella cheese (shredded)
  • 50 g Red onion (sliced thinly)
  • 50 g Bell pepper (sliced thinly)
  • 2 tbsp Fresh cilantro leaves (chopped)

Directions

Step 1

In a bowl, mix the plain yogurt, garlic, ginger, tandoori masala spice mix, lemon juice, olive oil, and salt to create the tandoori marinade.

Step 2

Add the chicken thigh pieces to the marinade, ensuring they are well coated. Cover the bowl and allow to marinate in the refrigerator for at least 1 hour, ideally overnight for more flavor.

Step 3

Preheat your oven to 200°C (400°F). Line a baking tray with parchment paper.

Step 4

Place the marinated chicken on the prepared tray and bake for 15-18 minutes, or until the chicken is cooked through. Alternatively, you can grill the chicken for added smokiness. Once done, let the chicken rest for 5 minutes, then cut it into bite-sized pieces.

Step 5

Preheat your oven to 220°C (425°F) for baking the pizza.

Step 6

Roll out the pizza dough on a floured surface to your desired thickness and transfer it to a pizza stone or baking tray.

Step 7

Spread the pizza sauce evenly over the dough, leaving a small border around the edges.

Step 8

Sprinkle half of the shredded mozzarella cheese over the sauce as the first layer.

Step 9

Top the pizza with the cooked tandoori chicken pieces, sliced red onion, and bell pepper.

Step 10

Finish by sprinkling the remaining mozzarella cheese over the toppings.

Step 11

Bake the pizza in the preheated oven for 12-15 minutes, or until the crust is golden and crisp and the cheese is bubbling and browned in spots.

Step 12

Remove the pizza from the oven and let it rest for a couple of minutes. Garnish with fresh cilantro leaves before serving.

Step 13

Slice the pizza and enjoy your Tandoori Chicken Pizza fresh and hot!
