Ingredients

  • 1 kg Chicken (whole, skinless)
  • 200 g Yogurt (plain, full-fat)
  • 2 tbsp Ginger paste
  • 2 tbsp Garlic paste
  • 2 tbsp Lemon juice
  • 1 tsp Turmeric powder
  • 2 tsp Red chili powder
  • 2 tsp Garam masala
  • 1 tsp Cumin powder
  • 2 tsp Salt
  • 2 tbsp Vegetable oil
  • 2 tbsp Cilantro (for garnish)
  • 1 pinch Red food coloring (optional)

Directions

Step 1

Rinse the chicken thoroughly and pat dry with paper towels. Using a sharp knife, make several deep slits in the chicken to allow the marinade to penetrate.

Step 2

In a large mixing bowl, combine yogurt, ginger paste, garlic paste, lemon juice, turmeric, red chili powder, garam masala, cumin powder, salt, and vegetable oil. Add a pinch of red food coloring if using.

Add the chicken to the marinade and ensure it is well-coated, including inside the slits. Cover the bowl with plastic wrap and marinate in the refrigerator for at least 4 hours or overnight for the best results.
