Ingredients

  • 1 cup Tamarind pulp
  • 1 cup Pitted dates
  • 1 cup Jaggery or brown sugar
  • 1 teaspoon Cumin seeds
  • 1 teaspoon Fennel seeds
  • 1 teaspoon Red chili powder
  • 0.5 teaspoon Ground ginger
  • 0.5 teaspoon Salt
  • 2 cups Water

Directions

Step 1

In a medium saucepan, combine tamarind pulp, pitted dates, and water. Bring the mixture to a boil over medium-high heat.

Step 2

Reduce the heat to medium and let it simmer for about 10–15 minutes, stirring occasionally, until the dates soften and the mixture thickens slightly.

Step 3

Remove the saucepan from the heat and let the mixture cool to room temperature.

Step 4

Once cooled, blend the mixture in a blender or use an immersion blender to form a smooth paste.

Step 5

Strain the blended mixture through a fine mesh sieve into a bowl to remove any fibers or chunks, ensuring a smooth chutney.

Step 6

Return the strained chutney to the saucepan and place it over low heat.

Step 7

Add jaggery or brown sugar, cumin seeds, fennel seeds, red chili powder, ground ginger, and salt. Stir well to combine.

Step 8

Simmer the mixture for another 5–7 minutes, stirring frequently, until it thickens to your desired consistency.

Step 9

Allow the chutney to cool completely before transferring it to an airtight container.

Step 10

Serve chilled or at room temperature as a condiment with your favorite snacks or store in the refrigerator for up to two weeks.
