Ingredients

  • 6 pieces tamarillos
  • 500 ml water
  • 200 grams granulated sugar
  • 1 piece vanilla bean
  • 1 piece cinnamon stick
  • 4 pieces whole cloves
  • 1 strip orange zest
  • 200 ml whipping cream
  • 2 tablespoons powdered sugar
  • 4 tablespoons caramel sauce
  • 6 leaves mint leaves (optional, for garnish)

Directions

Step 1

Bring a large pot of water to a boil. Using a small knife, make a shallow 'X' incision at the base of each tamarillo.

Step 2

Blanch the tamarillos in boiling water for 1 minute, then immediately transfer them to a bowl of ice water. Peel the skins off carefully and set the tamarillos aside.

Step 3

In a medium saucepan, combine 500ml water, granulated sugar, vanilla bean (split lengthwise), cinnamon stick, whole cloves, and orange zest. Bring to a boil over medium heat, stirring until the sugar dissolves.

Reduce the heat to low and add the peeled tamarillos to the spiced syrup. Simmer gently for 15–20 minutes, ensuring the tamarillos are fully submerged and absorb the syrup's flavors.
