Ingredients

  • 1 pound Ground beef or ground turkey
  • 1 medium Yellow onion, diced
  • 2 cloves Garlic cloves, minced
  • 2 tablespoons Taco seasoning
  • 14.5 ounces Canned diced tomatoes with green chilies (Rotel)
  • 1 cup Corn kernels, drained if canned
  • 15 ounces Black beans, rinsed and drained
  • 2 cups Shredded Mexican blend cheese
  • 8.5 ounces Cornbread mix
  • 0.5 cups Milk (as required by cornbread mix)
  • 1 large Egg (as required by cornbread mix)
  • 2 tablespoons Butter, melted
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Pepper
  • 0 Sour cream (optional, for serving)
  • 0 Cilantro, chopped (optional, for garnish)

Directions

Step 1

In a large skillet over medium heat, cook the ground beef or turkey until browned, breaking it into crumbles. Drain any excess grease.

Step 2

Add the diced onion and minced garlic to the skillet and sauté for 2-3 minutes until softened and fragrant.

Step 3

Stir in the taco seasoning, canned diced tomatoes with green chilies (with their juices), corn, black beans, salt, and pepper. Mix well and let cook for an additional 2-3 minutes. Remove from heat.

Step 4

Grease the inside of the crock pot with nonstick spray or butter to prevent sticking.

Step 5

In a medium mixing bowl, combine the cornbread mix with the milk, egg, and melted butter. Stir until just combined (do not overmix).

Step 6

Pour half of the cornbread batter into the bottom of the greased crock pot and spread it out evenly.

Step 7

Layer the seasoned meat and vegetable mixture over the cornbread batter.

Step 8

Sprinkle 1 cup of shredded cheese over the meat mixture.

Step 9

Carefully spread the remaining cornbread batter over the cheese layer.

Step 10

Cover and cook on low heat for 3.5 to 4 hours, or until the cornbread is fully cooked through and golden on top.

Step 11

About 10 minutes before serving, sprinkle the remaining 1 cup of shredded cheese over the top and cover until melted.

Step 12

Serve warm with optional sour cream and chopped cilantro for garnish.
