Ingredients

  • 2 cups Japanese short-grain rice
  • 2.5 cups Water
  • 2 tablespoons Soy sauce
  • 1 tablespoon Mirin
  • 1 tablespoon Sesame oil
  • 1 medium Carrot, finely diced
  • 4 pieces Shiitake mushrooms, thinly sliced
  • 2 stalks Green onions, finely chopped
  • 0.5 cup Edamame (shelled)
  • 1 sheet Nori (seaweed sheets), cut into small strips
  • 1 teaspoon Toasted sesame seeds

Directions

Step 1

Rinse the Japanese short-grain rice in cold water until the water runs clear. Drain thoroughly.

Step 2

Place the rinsed rice in a rice cooker or a medium-sized pot and add 2.5 cups of water. Cook according to the rice cooker instructions or bring the rice to a boil in the pot, then reduce to a simmer, cover, and cook for 15-20 minutes until tender.

Step 3

While the rice is cooking, heat sesame oil in a large skillet or wok over medium heat.

Add the diced carrot and cook for 2-3 minutes until slightly softened.

Add the sliced shiitake mushrooms to the skillet and sauté for another 3-4 minutes until they are tender.
