Ingredients

  • 250 grams spaghetti (or pasta of choice)
  • 4 tablespoons tahini
  • 2 tablespoons lemon juice
  • 2 garlic cloves, minced
  • 2 tablespoons olive oil
  • 4 tablespoons warm water
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon red pepper flakes (optional)
  • 2 tablespoons fresh parsley, chopped (optional, for garnish)
  • 2 tablespoons parmesan cheese (optional, for topping)

Directions

Step 1

Bring a large pot of salted water to a boil and cook the spaghetti according to the package instructions until al dente. Reserve 1/2 cup of pasta water before draining.

Step 2

In a medium bowl, whisk together the tahini, lemon juice, minced garlic, olive oil, warm water, salt, and black pepper until you achieve a creamy and smooth consistency. Adjust the water amount as needed for your desired sauce thickness.

Step 3

In a large pan over low heat, add the cooked spaghetti and the tahini sauce. Toss well to coat the pasta evenly.

Step 4

If the sauce is too thick, gradually add a bit of the reserved pasta water, stirring constantly, until the sauce reaches your preferred consistency.

Step 5

Taste and adjust seasoning with additional salt, black pepper, or red pepper flakes if desired.

Step 6

Serve immediately, garnished with fresh parsley and parmesan cheese, if using.
