Ingredients

  • 6 pieces Chicken thighs (bone-in, skin-on)
  • 2 large Sweet potatoes
  • 1 large Onion
  • 3 pieces Garlic cloves
  • 2 cups Chicken broth
  • 3 tablespoons Olive oil
  • 1 teaspoon Ground cinnamon
  • 1 teaspoon Ground ginger
  • 1 teaspoon Ground turmeric
  • 1 teaspoon Paprika
  • 1 pinch Saffron threads
  • 2 tablespoons Honey
  • 1 cup Dried apricots (optional)
  • 0.25 cup Slivered almonds (optional, for garnish)
  • 2 tablespoons Fresh parsley or cilantro (for garnish)
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper

Directions

Step 1

Peel and cut the sweet potatoes into large chunks (about 2-inch pieces). Set aside.

Step 2

Thinly slice the onion and mince the garlic cloves.

Step 3

In a large tagine or heavy, deep skillet, heat olive oil over medium heat.

Step 4

Season the chicken thighs with salt and black pepper on both sides.

Step 5

Sear the chicken thighs in the hot oil, 3-4 minutes per side, until golden brown. Remove and set aside.

Step 6

In the same pan, add the sliced onion and sauté for 5-7 minutes until softened and slightly caramelized.

Step 7

Add minced garlic, cinnamon, ginger, turmeric, and paprika. Cook for 1-2 minutes until fragrant.

Step 8

Return the seared chicken thighs to the pan, nestling them among the onions.

Step 9

Pour the chicken broth into the pan and stir in the saffron threads and honey.

Step 10

Scatter the sweet potato chunks and dried apricots (if using) around the chicken.

Step 11

Cover the tagine or skillet with a lid, reduce the heat to low, and let simmer for 45-50 minutes, or until the chicken is tender and the sweet potatoes are cooked through.

Step 12

Taste the sauce and adjust seasoning with more salt and pepper if needed.

Step 13

Before serving, garnish with slivered almonds (if using) and chopped fresh parsley or cilantro.

Step 14

Serve hot with couscous, rice, or crusty bread to soak up the flavorful sauce.
