  • 2 tbsp Olive oil
  • 8 pieces Corn tortillas
  • 0.25 cup Fresh cilantro
  • 1 large Lime
  • 0.5 cup Cheese (optional)

Directions

Step 1

Peel and dice the potato into small cubes (about 1/4-inch) and set aside.

Step 2

Finely chop the onion and garlic. Dice the tomatoes into small pieces or blend into a puree for a smoother filling.

Heat 2 tablespoons of olive oil in a large skillet over medium heat.
