Ingredients

  • 2 pounds Ground turkey
  • 1 large Egg
  • 0.5 cups Breadcrumbs
  • 2 tablespoons Taco seasoning
  • 0.5 cups Diced onion
  • 0.5 cups Diced bell pepper (any color)
  • 1 cups Shredded cheddar cheese
  • 0.25 cups Milk
  • 0.5 cups Salsa
  • 0.25 cups Ketchup
  • 2 tablespoons Chopped fresh cilantro (optional)
  • 1 tablespoon Olive oil or cooking spray

Directions

Step 1

Preheat your oven to 375°F (190°C). Lightly grease a 9x5-inch loaf pan with olive oil or cooking spray.

Step 2

In a large mixing bowl, combine the ground turkey, egg, breadcrumbs, taco seasoning, diced onion, diced bell pepper, shredded cheddar cheese, and milk. Use your hands or a spatula to mix until just combined. Do not overmix, as this may result in a dense meatloaf.

Step 3

Transfer the mixture to the prepared loaf pan. Shape the mixture into an even loaf, pressing gently to ensure that there are no air pockets.

Step 4

In a small bowl, mix the salsa and ketchup. Spread this mixture evenly over the top of the meatloaf as a glaze.

Step 5

Place the loaf pan in the oven and bake for about 60 minutes, or until the internal temperature reaches 165°F (74°C).

Step 6

Once cooked, remove the meatloaf from the oven and let it rest for 10 minutes before slicing.

Step 7

Sprinkle with chopped fresh cilantro if desired. Serve warm with your favorite sides, such as rice, beans, or a fresh green salad.
