Ingredients

  • 4 large Russet potatoes
  • 1 pound Ground beef (or turkey)
  • 1 packet Taco seasoning
  • 2 tablespoons Water
  • 1 cup Shredded cheddar cheese
  • 0.5 cup Sour cream
  • 0.5 cup Salsa
  • 1 cup Shredded lettuce
  • 0.5 cup Diced tomatoes
  • 0.25 cup Sliced black olives
  • 2 stalks Green onions, chopped
  • 1 tablespoon Olive oil
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Pepper

Directions

Step 1

Preheat your oven to 400°F (200°C).

Wash the Russet potatoes thoroughly, then dry them with a clean towel.

Rub each potato with olive oil and sprinkle with salt and pepper.

Place the potatoes directly on the oven rack or on a baking sheet lined with parchment paper. Bake for 50-60 minutes, or until the skins are crispy and a fork can easily pierce the center.

While the potatoes are baking, heat a skillet over medium heat and cook the ground beef, breaking it apart with a spoon, until browned and fully cooked (about 6-8 minutes).
