Ingredients

  • 12 oz Spaghetti
  • 1 lb Ground beef
  • 1 medium Yellow onion, diced
  • 3 cloves Garlic, minced
  • 1 packet Taco seasoning mix
  • 10 oz Diced tomatoes with green chilies (Rotel)
  • 8 oz Tomato sauce
  • 2.5 cups Beef broth
  • 1 cup Shredded cheddar cheese
  • 2 tbsp Fresh cilantro, chopped (optional)
  • 1 tbsp Olive oil
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper

Directions

Step 1

Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Drain and set aside.

Step 2

In a large skillet or Dutch oven, heat 1 tablespoon of olive oil over medium-high heat. Add the diced onion and sauté for 2-3 minutes until softened.

Step 3

Add the minced garlic and stir for 30 seconds until fragrant.

Step 4

Add the ground beef to the skillet, breaking it up with a spatula or spoon. Cook until browned, about 5-6 minutes. Drain any excess fat, if necessary.

Step 5

Stir in the taco seasoning, ensuring the beef is evenly coated.

Step 6

Add the diced tomatoes with green chilies, tomato sauce, and beef broth to the skillet. Stir to combine.

Step 7

Break the spaghetti in half (if necessary for fitting) and add it to the skillet. Submerge the pasta in the sauce.

Step 8

Bring the mixture to a boil, then reduce the heat to low. Cover the skillet and simmer for 12-14 minutes, stirring occasionally to prevent sticking, until the pasta is cooked and the sauce has thickened.

Step 9

Stir in salt and black pepper to taste.

Step 10

Turn off the heat and sprinkle the shredded cheddar cheese over the top. Cover the skillet and let it sit for 2-3 minutes, allowing the cheese to melt.

Step 11

Garnish with freshly chopped cilantro if desired. Serve warm and enjoy!
