Ingredients

  • 1 lb Ground beef
  • 2 tbsp Taco seasoning
  • 1 tbsp Olive oil
  • 6 cups Romaine lettuce
  • 1.5 cups Cherry tomatoes
  • 1 medium Cucumber
  • 1 cup Black beans
  • 1 cup Corn kernels
  • 1 cup Shredded cheese (cheddar or Mexican blend)
  • 2 cups Tortilla chips
  • 0.5 cup Sour cream
  • 0.5 cup Salsa
  • 2 tbsp Lime juice
  • 0.25 cup Cilantro (optional)
  • 0.5 tsp Salt
  • 0.25 tsp Pepper

Directions

Step 1

In a large skillet, heat the olive oil over medium heat. Add the ground beef and cook, breaking it up with a spatula, until browned and fully cooked, about 7-8 minutes.

Step 2

Stir in the taco seasoning with 2-3 tablespoons of water. Mix well and let it simmer for 2-3 minutes until the meat is well seasoned and slightly saucy. Remove from heat and set aside.

Meanwhile, wash and chop the romaine lettuce into bite-sized pieces. Place in a large mixing bowl.

Halve the cherry tomatoes, dice the cucumber, and rinse and drain the black beans. Add them to the bowl with the lettuce along with the corn kernels.
