Ingredients

  • 2 pounds Ground beef
  • 2 packets Taco seasoning
  • 1 cup Water
  • 6 cups Cooked white rice
  • 1 14-ounce can Canned diced tomatoes with green chilies (e.g., Rotel)
  • 2 cups Shredded cheddar cheese
  • 1 cup Frozen corn
  • 1 15-ounce can Canned black beans, rinsed and drained
  • 3 stalks Green onions, sliced
  • 0 Tortilla chips (optional, for serving)

Directions

Step 1

Heat a large skillet over medium-high heat and brown the ground beef until fully cooked, breaking it up with a wooden spoon. Drain excess grease if necessary.

Step 2

Stir in the taco seasoning and 1 cup of water. Simmer for 5 minutes or until the seasoning is well absorbed and the mixture thickens.

Step 3

In a large mixing bowl, combine the cooked white rice, seasoned ground beef mixture, canned diced tomatoes with green chilies, shredded cheddar cheese, frozen corn, and black beans.

Step 4

Mix everything together until evenly combined.

Step 5

Allow the mixture to cool slightly if freezing for later use. Divide into freezer-safe meal prep containers or freezer bags in serving-size portions. Label and freeze for up to 3 months.

Step 6

To serve fresh: transfer the mixture to a large casserole dish, cover with foil, and bake in a preheated oven at 350°F (175°C) for 15 minutes until heated through and the cheese is melted.

Step 7

Garnish with sliced green onions and serve with tortilla chips, if desired.
