Ingredients

  • 12 oz Rotini or penne pasta
  • 1 lb Ground beef
  • 1 packet Taco seasoning mix
  • 1 can Diced tomatoes with green chilies
  • 1 cup Tomato sauce
  • 2 cups Cheddar cheese, shredded
  • 1 cup Mozzarella cheese, shredded
  • 2 Eggs
  • 1 tbsp Olive oil
  • 0.5 tsp Salt
  • 0.25 tsp Pepper
  • 2 tbsp Fresh parsley or cilantro, chopped

Directions

Step 1

Preheat your oven to 375°F (190°C). Grease a 9-inch springform pan or deep pie dish with olive oil and set aside.

Step 2

Cook the pasta according to package directions until al dente. Drain and set aside to cool slightly.
