Ingredients

  • 1 pound ground beef
  • 1 medium yellow onion
  • 2 garlic cloves
  • 1 packet taco seasoning mix
  • 3 cups beef broth
  • 1 cup tomato sauce
  • 8 ounces egg noodles
  • 1.5 cups shredded cheddar cheese
  • 0.5 cup sour cream
  • 2 tablespoons chopped fresh cilantro
  • 1 tablespoon olive oil
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Dice the onion and mince the garlic cloves.

Step 2

In a large skillet or sauté pan, heat olive oil over medium-high heat.

Step 3

Add the ground beef to the skillet and cook until browned, about 5-7 minutes. Break it apart with a spatula as it cooks.

Step 4

Add the diced onion and minced garlic to the skillet. Cook for 3-4 minutes until softened and aromatic.

Step 5

Stir in the taco seasoning mix, salt, and black pepper. Combine thoroughly with the beef and vegetables.

Step 6

Pour in the beef broth and tomato sauce, stirring well to combine.

Step 7

Add the egg noodles into the skillet, making sure they are mostly submerged in the liquid.

Step 8

Bring the mixture to a boil, then reduce the heat to low and cover. Simmer for 8-10 minutes, stirring occasionally, until the noodles are tender and the sauce has thickened.

Step 9

Once the noodles are cooked, remove the skillet from heat. Stir in the sour cream and 1 cup of shredded cheddar cheese until well incorporated.

Step 10

Sprinkle the remaining 0.5 cup of shredded cheddar cheese on top. Cover the skillet and let it sit for 2-3 minutes to allow the cheese to melt.

Step 11

Garnish with chopped fresh cilantro before serving.

Step 12

Serve the Taco Noodle Dinner warm and enjoy!
