Ingredients

  • 1 lb Ground beef
  • 2 tbsp Taco seasoning
  • 1 cup Water
  • 1.5 cups All-purpose flour
  • 1 tbsp Baking powder
  • 0.5 tsp Salt
  • 0.75 cup Milk
  • 2 Large eggs
  • 1 cup Shredded cheddar cheese
  • 0.5 cup Sour cream (optional, for garnish)
  • 0.25 cup Chopped fresh cilantro (optional, for garnish)

Directions

Step 1

Preheat your oven to 375°F (190°C) and lightly grease a 12-cup muffin tin or line it with paper muffin liners.

Step 2

In a skillet over medium heat, cook the ground beef until browned, breaking it up into crumbles as it cooks. Drain any excess grease.

Add the taco seasoning and water to the skillet with the cooked beef. Stir to combine and cook for 2–3 minutes until the mixture thickens. Remove from heat and let cool slightly.
