Ingredients

  • 2 pounds Ground beef (80/20 blend)
  • 2 tablespoons Taco seasoning mix
  • 2 large Eggs
  • 1 cup Breadcrumbs
  • 1 cup Shredded cheddar cheese
  • 0.25 cups Milk
  • 0.5 medium Yellow onion, finely diced
  • 2 tablespoons Cilantro, chopped (optional)
  • 0.5 cups Salsa
  • 0.25 cups Ketchup

Directions

Step 1

Preheat your oven to 375°F (190°C). Grease a standard size loaf pan lightly with cooking spray or oil.

Step 2

In a large mixing bowl, combine the ground beef, taco seasoning mix, eggs, breadcrumbs, shredded cheddar cheese, milk, diced onion, and chopped cilantro. Mix everything together gently with your hands until just combined. Avoid overmixing to keep the meatloaf tender.

Step 3

Transfer the meat mixture to the prepared loaf pan, pressing it down evenly to shape it into a loaf.

Step 4

In a small bowl, stir together the salsa and ketchup to create the glaze. Spread this mixture evenly over the top of the meatloaf.

Step 5

Place the meatloaf in the preheated oven and bake for 55-60 minutes, or until the internal temperature reaches 160°F (71°C) when checked with a meat thermometer.

Step 6

Once cooked, remove the meatloaf from the oven and let it rest for 5-10 minutes before slicing. This allows the juices to redistribute for a moist meatloaf.

Step 7

Slice and serve warm with your favorite sides like Mexican rice, roasted veggies, or a fresh side salad. Enjoy!
