  • 1 lb Ground beef
  • 0.5 lb Ground pork
  • 2 large Eggs
  • 0.5 cup Breadcrumbs
  • 2 tbsp Taco seasoning
  • 1 medium Onion, finely chopped
  • 2 cloves Garlic, minced
  • 0.25 cup Fresh cilantro, chopped
  • 1 can Diced tomatoes with green chilies (e.g., Rotel), drained
  • 1 cup Shredded Mexican blend cheese
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 1 tbsp Olive oil, for greasing

Directions

Step 1

Preheat your oven to 375°F (190°C). Lightly grease a loaf pan with olive oil or non-stick spray.

Step 2

In a large mixing bowl, combine the ground beef, ground pork, and taco seasoning. Mix well using your hands or a wooden spoon until evenly incorporated.

Step 3

Add the chopped onion, minced garlic, chopped cilantro, drained diced tomatoes with green chilies, breadcrumbs, eggs, salt, and black pepper to the meat mixture. Mix thoroughly until all ingredients are evenly distributed.
