Ingredients

  • 1 lb Ground beef
  • 1 packet Taco seasoning mix
  • 0.5 cup Water
  • 6 pieces Flour tortillas (8-inch)
  • 2 cups Salsa
  • 1 can (15 oz) Black beans, drained and rinsed
  • 1 cup Frozen corn, thawed
  • 2 cups Shredded cheddar cheese
  • 1 cup Shredded Monterey Jack cheese
  • 0.5 cup Sour cream (optional)
  • 2 tablespoons Chopped fresh cilantro (optional)

Directions

Step 1

Preheat your oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish.

Step 2

In a large skillet over medium-high heat, cook the ground beef until browned and fully cooked, breaking it up with a spoon as it cooks. Drain any excess grease.

Add the taco seasoning mix and water to the skillet with the ground beef. Stir to combine and cook for 2-3 minutes until the mixture has thickened slightly. Remove from heat.

Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes.

Remove the foil and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
