Ingredients

  • 1 pound Ground beef
  • 1 Yellow onion, chopped
  • 2 cloves Minced garlic
  • 1 package Taco seasoning mix
  • 0.67 cup Water
  • 14.5 ounces Canned diced tomatoes with green chilies
  • 15 ounces Black beans, drained and rinsed
  • 1 cup Frozen corn, thawed
  • 4 8-inch Flour tortillas
  • 2 cups Shredded cheddar cheese
  • 0.5 cup Sliced black olives
  • 2 Green onions, chopped
  • 0.25 cup Chopped fresh cilantro

Directions

Step 1

Preheat your oven to 375°F (190°C). Grease a 9x13 inch baking dish lightly with cooking spray or oil.

In a large skillet over medium heat, cook the ground beef with the chopped onion and minced garlic until the beef is browned and the onions are soft, about 5-7 minutes. Drain excess fat.
