Ingredients

  • 16 ounces Refrigerated biscuit dough
  • 1 pound Ground beef
  • 1 packet Taco seasoning
  • 0.25 cup Water
  • 1 cup Shredded cheddar cheese
  • 0.5 cup Sour cream
  • 0.5 cup Diced tomatoes
  • 0.5 cup Chopped lettuce
  • 2 tablespoons Chopped cilantro (optional)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Spray a standard 12-cup muffin tin with non-stick cooking spray and set aside.

Step 3

In a large skillet over medium heat, cook the ground beef until browned, breaking it up into small pieces with a spatula, about 5-7 minutes.

Step 4

Drain any excess grease from the cooked beef.

Step 5

Add the taco seasoning and 1/4 cup of water to the skillet with the beef. Stir to combine and simmer for 2-3 minutes until the mixture thickens. Remove from heat.

Step 6

Open the can of refrigerated biscuit dough and separate the biscuits. Flatten each biscuit with your hands or roll it gently with a rolling pin to create a 4-inch circle.

Step 7

Press each flattened biscuit into a cup of the prepared muffin tin, pushing it up the sides to form a cup shape.

Step 8

Spoon about 2 tablespoons of the seasoned meat mixture into each biscuit cup.

Step 9

Sprinkle shredded cheddar cheese on top of the meat mixture in each cup.

Step 10

Bake in the preheated oven for 12-15 minutes, or until the edges of the biscuits are golden brown.

Step 11

Carefully remove the Taco Biscuit Bites from the muffin tin and let them cool slightly on a wire rack.

Step 12

Before serving, top each bite with sour cream, diced tomatoes, chopped lettuce, and a sprinkle of cilantro if desired.

Step 13

Serve warm and enjoy!
