Ingredients

  • 1 pound ground beef
  • 1 packet taco seasoning mix
  • 0.6667 cup water
  • 8 ounces tomato sauce
  • 10 ounces canned diced tomatoes with green chilies
  • 1 cup frozen corn
  • 2 cups shredded Mexican cheese blend
  • 1 16-ounce can canned refrigerated biscuit dough
  • 2 tablespoons green onions (sliced)
  • 0 as needed sour cream (for garnish, optional)

Directions

Step 1

Preheat your oven to 375°F (190°C). Grease a 9x13-inch baking dish and set it aside.

Step 2

In a large skillet over medium heat, cook the ground beef until browned and fully cooked, breaking it apart with a spoon, about 6-8 minutes. Drain any excess fat.

Step 3

Stir in the taco seasoning mix and water according to the packet instructions. Add the tomato sauce, diced tomatoes with green chilies, and frozen corn. Stir well to combine and let it simmer for 3-5 minutes until the mixture thickens slightly.

Step 4

Transfer the taco mixture to the prepared baking dish and spread it out evenly.

Step 5

Sprinkle 1 1/2 cups of the shredded Mexican cheese blend over the taco mixture.

Step 6

Open the can of refrigerated biscuit dough and separate the biscuits. Cut each biscuit into quarters, then arrange the biscuit pieces evenly on top of the cheese layer.

Step 7

Sprinkle the remaining 1/2 cup of shredded Mexican cheese blend over the biscuit pieces.

Step 8

Bake in the preheated oven for 20-25 minutes, or until the biscuits are golden brown and fully cooked through.

Step 9

Remove from the oven and allow the dish to cool for 5 minutes. Sprinkle the sliced green onions over the top.

Step 10

Serve warm, and if desired, garnish with a dollop of sour cream.
