Ingredients

  • 4 pieces salmon fillets
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons olive oil
  • 4 tablespoons unsalted butter
  • 0.5 cup sliced almonds
  • 2 tablespoons lemon juice
  • 2 tablespoons fresh parsley
  • 2 cloves garlic
  • 0.25 cup white wine (optional)

Directions

Step 1

Season both sides of the salmon fillets with salt and black pepper.

Step 2

Heat the olive oil in a large non-stick skillet over medium-high heat.

Step 3

Place the salmon fillets, skin-side down, in the skillet and cook for 4-5 minutes. Flip the fillets and cook for an additional 3-4 minutes until the fish is cooked through and flakes easily with a fork. Remove the salmon from the skillet and keep warm.

Step 4

Reduce heat to medium and add the unsalted butter to the skillet. Allow it to melt and start to brown slightly, about 2-3 minutes.

Step 5

Add sliced almonds to the butter and toast them, stirring frequently, until they turn golden brown, about 2-3 minutes.

Step 6

Stir in the garlic (minced or finely chopped) and cook for an additional minute until fragrant.

Step 7

Deglaze the pan with white wine (if using) or a splash of water. Let it simmer for 1-2 minutes to reduce slightly.

Step 8

Add the lemon juice and parsley to the pan, stirring to combine.

Step 9

Spoon the buttery almond sauce over the warm salmon fillets.

Step 10

Serve immediately with your choice of sides such as steamed vegetables, rice, or roasted potatoes.
